Oranges and Lemons...and a secret garden.

 I have been baking...this orange cake is simply divine, and oh so easy to make. You must try it - here is the recipe...

ORANGE CAKE

2 oranges
1 cup sugar
6 eggs
2 cups almond meal

Cover oranges with water, bring to boil then simmer for 1 hour. Cool completely, then remove seeds (I don't bother with either), and puree. Beat eggs and sugar together, add puree and almond meal. Stir well, pour into greased cake tin and bake at 160 degrees celcius for 70 minutes. (Mine was actually done after 65 minutes, so just check it with a skewer after an hour).

That's it people! How easy is that? It's just perfect sprinkled with icing sugar and served with a generous dollop of double cream - mmmmmm.

I am wondering if I could try lemons in this with some poppy seeds, seeing as my lemon tree has been quite prolific...big word, I know...
I have been out in the front garden planting some beautiful roses that were a gift from a dear friend. I am very spoilt indeed...I love the idea of this type of gift. Once my roses start to bloom and grow, I shall think of Jo each time I cut an armful to bring inside. There is so much weeding to be done, so I shall try to do a little each day this week...I just love the smell of the earth this time of the year. I am inspired to keep going...
The view outside my dining room this time of the year makes me happy...my camellias are all beginning to bloom...just perfect to bring inside to fill my vases.

...and I am waiting to have this little garden room paved, so I can begin planting a woodland garden...looking down from our back deck.

I will keep you updated, as this little project starts to happen. What's everyone else been up to?

  1. Alas, my Lemon Tree expired, it wasn't very old... and since my G-Son consumes Lemons at an alarming rate I've just been buying bags of them. Wish I had a prolific Lemon Tree to keep up with the boy! *winks*

  2. I took a stroll around my (small) garden last night as it was such a pleasant evening. Wine glass in hand I admired the flowerbeds... but oh so briefly because I was stunned at the voracious weeds which had leapt up so quickly - including the dreaded bindweed which I battle with every year... I ran back indoors and tried to forget about all the work that awaited me out there!

    Now that cake sounds amazing - I love anything with ground almonds in (I'm guessing that your meal is our ground!). No flour either - great for my low carb diet (we'll gloss over the sugar....)

  4. Hello Tina,

    Baking seems a good project for today as it is cold and windy. We have finally sewed the last of our seeds of our vegetable garden and planted the last of the tomato plants that needed transplanting. I have been ever so delighted as the peonies and foxglove are in bloom! I spend any spare moments wandering through the cutting gardens gazing at the many colored blooms and inhaling the rainbow of scents. Perfect are these days ... now only if the sun would return!
