Thought I would share the Hummingbird cake recipe, cos it was yummo!
HUMMINGBIRD CAKE
3 cups flour
2 cups sugar
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 cups bananas, chopped
1 cup chopped nuts, lightly toasted (optional)
1 1/2 cups vegetable oil
3 eggs, slightly beaten
tin crushed pineapple, undrained
Preheat oven to 350 (180 celcius). Grease and flour Bundt pan.
In a large bowl, with a wire wisk, combine the first 6 ingredients. By hand, add remaining ingredients. Stir until just combined. Pour batter into pan.
Bake for 65 to 70 minutes or until done. Cool in pan on cake rack for 25 - 30 minutes. Remove from pan to cool completely on rack.
Now, I really recomment greasing and flouring pan...my cake stuck! No matter, it still tasted scrumdiddlyumptious! I didn't ice it - personally I don't think it needed any, but cream cheese icing would be sublime with this, if you can be bothered. Now, pop the kettle on, grab your favourite magazine, and tuck in!
Oh, the garden is asleep on my side of the world, but there is still beauty around...my daphne is beginning to flower, and every time I walk past it's scent is pure bliss to my senses. All my camellia bushes are laden with buds, and I cannot wait until they burst into bloom...I love to pick them and bring them inside and pop them in vases throughout the house.

ReplyDeleteLove the birdhouse! The cake sounds delicious! I'm on a diet.....but maybe I'll make as a reward when I reach my halfway point......I never said I wouldn't ever eat cake again! I'm on a diet but not dead! lol
